Marinated Chicken Grilled with Onions, Peppers and Mushrooms
Ingredients:
- 2 Chicken breasts, skinless
- 1 large Lemon, Juice and zest
- 3 cloves Garlic, chopped finely
- 1 tsp smoked Paprika
- 1/2 tsp Turmeric
- 2 large Onions, cut into chunks
- a handful of Mushrooms
- 1 red Pepper, cut into chunks
- 1 green Pepper, cut into chunks
- 1 tbsp Coriander, finely chopped
- 3 tbsp extra virgin Olive Oil
- Salt and Pepper

Vanilla Cobbler with Mixed Summer Berries
The original recipe for this cobbler comes from talented cook and photographer The Pioneer Women. Its a easy and tasty summer treat ready in less than half an hour. I replaced fresh blackberries in her recipe with mixed frozen berries and it worked well. I also added a touch of vanilla for added flavour.
Ingredients:
- 150 g self-rising Flour
- 150 g caster Sugar
- 150 ml Milk
- 70 g Butter, melted
- 200 g frozen mixed Berries, defrosted
- 1 tsp Vanilla

Persian Stuffed Vegetables with Walnuts, Pomegranate Seeds and Herbs
This is a traditional recipe from northern part of Iran and one of my childhood favourites. Thank you Farida for reminding me of this one:-)
Ingredients:
- 2 small Aubergines, peeled and thinly sliced lengthwise
- 4 large Tomatoes
- 1 large Onion, peeled and cut into chunks
- 4 cloves Garlic, crushed
- 100 g Walnuts
- 1 tbsp Pomegranate paste
- 1 Pomegranate, seeds only
- 1 tbsp fresh Parsley, chopped finely
- 1 tbsp fresh Mint, chopped finely
- 1 tsp Golpar powder (Optional)
- 4 tbsp Olive Oil
- Salt and Pepper
