I love onion bhaji but have never tried to cook it before until I cam across a recipe on Jeenas kitchen for baked bhaji and gave it a shot. These are very easy to make and taste good too without all the oil of deep fried bhajis.
Ingredients:
- 3 large Onions, sliced
- 3 tbsp Flour
- 1 tbsp Tomato pure dissolved in 100 ml boiling water
- 1 tsp Cumin
- 1 tsp Turmeric
- 1/4 tsp ground Coriander
- 1/4 tsp Chilli powder
- 1/4 tsp Ginger
- 2 tbsp Vegetable Oil
- Salt
Method:
- Heat the oil in a frying pan and fry the onions for 6-7 minutes until soft.
- Preheat the oven to Gas mark 6/ 200 C.
- Place fried onions in a mixing bowl with flour, all the spices and dissolves tomatoes pure and mix well.
- Lightly grease a baking dish and form the bhaji mixture into small cakes and place on the baking tray.
- Cook in the oven for 15 minutes or more until golden

I wouldn’t normally fry chicken like this but this is one of those meals you can afford to eat once in a while amazing and it was absolutely divine.

Add to this Recipe Half a teasp of Mustard Seed and One tabsp Fresh Chopped Coriander. Here's the Secriet, Leave in the fridge over night so that the onion(in the batter) becomes soft, then Fry. Taste The Difference.

Onion Bhaji
Ingredients: 2 onions 1/2 tsp. cumin, ground 1 egg, beaten 1 portion cayenne 1 1/2 cups chick pea flour, besan 2 tbs. cilantro, fresh, chopped 1 cup cold water, approx.
Make sure vegetable oil is heated to 350F before adding food (bread cube browns in 15 seconds) or test with deep fry thermometer. Too cool oil makes everything limp and greasy. Drain on a rack or paper towel before serving. A wok makes an excellent deep fryer.
Cut onion in half and slice about 1/4 inch thick. Beat together egg, flour and enough water to make a batter as thick as whipping cream. Beat in spices. Let rest 15 minutes.
Stir onions into mixture and let sit 5 minutes. Heat about 1 inch oil in skillet on high heat. when very hot, drop a small mound of onion rings into oil. Press down slightly with spatula. Fry on one side until crisp and brown, turn over and fry second side. Remove bhajis as they cook. Keep warm in 200F oven.
