This is a healthy and hearty soup which keeps well in the freezer. You only need to eat a small bowl to feel full and satisfied.

Ingredients:
- 450 g/15 oz. green Lentils
- 1 medium Onion, chopped finely
- 2 Spring Onions, chopped
- 2 cloves Garlic, chopped finely
- 1 Leek, chopped
- 1 medium Sweet Potato, peeled and chopped into cubes
- 1.5 litres/6.5 cups Chicken or Vegetable Stock
- 1 tbsp Parsley, chopped
- 1 tbsp Coriander, Chopped
- 1 tbsp Mint, chopped
- 1/2 tsp Turmeric
- 1/2 tsp Cumin
- 1/2 tsp Paprika
- Salt and Pepper
- 2 tbsp Olive Oil
Method:
- Heat the oil in a pan and fry onion, spring onion, leek and garlic over medium heat for 5-7 minutes until soft.
- Add sweet potato and lentils to the pan and mix well with the onion mixture.
- Add turmeric, paprika, cumin and seasoning. Mix well.
- Add all the herbs and mix.
- Add the stock liquid, bring to boil and simmer covered for 15-18 minutes until lentils are soft.
- Serve hot.

Healthy indeed. I love lentil soups a lot. I prepare something similar to yours, but not quite like yours. I should try your recipe next time.

I make a lot of lentil soup because it is so cheap and you get full easily. But I never added coriander, I will try that next time.
