Turkey Breast Marinated in Herbs, Olive Oil and Lemon juice with Buttery Asparagus
Ingredients:
- 2 Turkey Breasts
- 150 g Asparagus
- 2 cloves Garlic, crushed
- 1 tbsp Mint
- 1 tbsp Basil
- 1 tbsp Coriander
- 1 Lemon, juice and zest
- 1 tbsp Extra Virgin Olive Oil
- 2 tbsp Olive Oil
- 25 g Butter
- Salt and Pepper
Method:
- Place turkey breasts in a deep dish, then add the herbs, juice and zest of lemon, garlic, extra virging olive oil and salt and pepper. Rub the mixture over the turkey breasts, then cover the dish and leave in the fridge overnight.
- Heat the olive oil in a frying pan and cook the turkey breasts for 8-10 minutes over medium heat until golden on the outside and cooked inside.
- Steam the asparagus for 5-7 minutes.
- Melt the butter and pour over the asparagus before serving with the turkey breast.
