Matin, this is a great recipe! In south-east part of Azerbaijan walnut stuffing are especially popular. We use almost the same walnut stuffing to stuff the fish, chicken, cabbage leaves and in some regions, eggplants too. It is sometimes added to stews - fisinjan. Pretty similiar. I personally have never stuffed eggplants with walnuts, but it looks yummy! I should try your recipe.
