Easy and Healthy Haddock Cooked in Yogurt and Sun-dries Tomatoe Sauce
Ingredients:
- 2 Haddock fillets
- 6 tbsp Greek Yogurt
- 2 tbsp Sun-dried Tomato paste
- 2 tbsp Basil, chopped
- 1 tbsp Olive Oil
- Black Pepper
Method:
- Preheat the oven to 200 C/ Mark 6.
- In a bowl, mix the yogurt with olive oil, sun-dried tomato paste, basil and season with black pepper.
- Place haddock fillets in an oven proof dish and cover them with the yogurt sauce.
- Cover the dish with foil and cook in the oven for 10 minutes.
- Remove the foil, turn up the oven to 220 C/ Mark 7 and cook the fish for another 5 minutes.
- Serve hot with crusty bread.
