Oven Cooked Chicken Patties with Cooked Potatoes
Ingredients:
- 2 large Potatoes
- 4 pieces Chicken breast/ tight, boned and skinned
- 1 large Onion, sliced
- 1 Egg, lightly beaten
- 1/2 tsp Turmeric
- 1/2 tsp Paprika
- Salt and Pepper
- 1 tbsp Olive Oil
Method:
- Cut the potatoes into large chunks and cook in a pan of boiling water for 10 minutes.
- Cook the chicken pieces in a pan of boiled salted water for 15 minutes until cooked.
- Heat the oil in a frying pan and fry the onions over medium heat for 5-7 minutes until lightly golden.
- Pre heat the oven to 200 C/ Gas mark 6.
- Once cooked, drain and peel the potatoes, place in a large bowl and mash using a fork.
- Drain the chicken pieces and shred them thinly. Add the chicken to the bowl of mash.
- Add fried onions, beaten egg, paprika and turmeric to the bowl, season and mix well.
- Shape the patties in your hands, place them on a baking tray and cook in the oven for 20-25 minutes or until golden on top.
- Serve with green salad.
