Egg Fried Rice with Peas, Salted Peanuts and Chilli
Ingredients:
- 225 g wild Rice/ Basmati
- 2 Eggs, beaten
- 100 g frozen Peas
- 100 g salted Peanuts, roughly crushed
- 1 large Onion, finely chopped
- 2 cloves Garlic, finely chopped
- 1 red Chilli, deseeded and chopped finely (Optional)
- 2 tbsp Soy sauce
Method:
- Wash the rice under cold running water for a minute. Fill a pan with boiling water and cook the rice uncovered for 12 minutes or until slightly soft.
- Meanwhile, Heat the oil in a large pan and fry onions and garlic for 5 minutes until lightly golden.
- Drain the rice and add to the onion mixture and mix well.
- Add the peas to the rice and mix well. Add the beaten eggs to the rice, mix well and cook for 3-4 minutes, until eggs are cooked.
- Add the crushed peanuts and chilli pieces to the rice and mix well.
- Serve with Greek yogurt.
