Easy Tabbouleh with Couscous with Fresh Vegetables and Herbs
Ingredients:
- 80 g Couscous
- 50 g green Peas
- 1 small Gem Lettuce, roughly chopped
- 3 ripe Tomatoes, finely chopped
- 1 medium Cucumber, finely chopped
- 1 small red Onion, finely chopped
- 50 g green Olives, halved
- 1 small bunch of Mint, chopped
- 150 ml vegetable Stock
- 2 tbsp Olive Oil
- 1/2 Lime, juice only
- Salt and Pepper
Method:
- Add the boiling veg stock to the couscous in a bowl, then add the peas, mix and cover tightly and set aside.
- Meanwhile, in a large bowl, mix the chopped tomatoes with cucumber, lettuce, onion and olives.
- Fluff up the couscous with a fork and add to the chopped vegetables. Add the chopped mint, olive oil and lime juice and season with salt and pepper.
- Mix well before serving.
