Spicy Oven Cooked Chicken
Ingredients:
- 2 free large Chickens, spatchcocked
- 50 ml Butter
- 1 tsp Sugar
- 1 small bunch of Mint, chopped
Piri-Piri Sauce
- 1/2 tbsp Maggie hot Chilli sauce (depends how hot you like it)
- 3 cloves Garlic, chopped finely
- 50 ml red wine Vinegar
- Salt
Method:
- To make the piri- piri sauce, in a large shallow tray, mix the chilli sauce, garlic, vinegar and salt together. Add chickens and mix well with the marinade. Cover the tray and leave in the fridge for at least 1 hour.
- Preheat the oven to 200 C/ Gas mark 6.
- Remove the chicken from the marinade tray and set the marinade aside.
- Heat a large shallow frying pan and fry chickens for 5 minutes on each side until browned. Put the pan in the oven and cook for 30 minutes or until completely cooked.
- Meanwhile, heat the butter in a pan, add the sugar and the remaining piri- piri sauce from marinade. heat up the sauce and add the chopped mint at the last mint.
- Cut the cooked chicken into pieces and pour over the sauce before serving.
