Banana Slice with Almonds and Vanilla

Ingredients:

• 175 g self raising Flour
• 100 g Butter, diced
• 75 g Sugar
• 50 g ground Almond
• 1 Egg, beaten
• 4 large Bananas
• 25 g Almond flakes
• 3 tbsp Milk
• 1/2 tsp Vanilla extracts
• 1/4 tsp Cinnamon

Method:

• Preheat the oven to 180 C/ Gas mark 5.
• Sift the flour in a large bowl, then add the diced butter and mix with fingers until the mixture looks like breadcrumbs.
• Add the sugar and ground almonds to the flour mixture and mix with a wooden spoon. Set aside 75 g of the mixture for topping.
• Add the beaten egg, milk and vanilla to the flour mixture and mix until smooth (Add more milk if very dry).
• Lightly oil a baking dish (8 inch square) and spoon the mixture, smooth flat.
• Slice the bananas thinly and cover the whole surface of the mixture.
• Sprinkle the top with the sugar and almond mixture first, then sprinkle with almond flakes.
• Bake in the preheated oven for 25-30 minutes until well risen and topping is golden.
• Sprinkle with cinnamon before serving.
