Thai style Chicken and Mushroom Curry

Ingredients:

• 2 Chicken breasts, skinless, chopped into bite size chunks
• 200 g Mushrooms, sliced
• 150 ml Coconut milk
• 1 Lime, juice only
• 4 Spring Onions, chopped
• 1 tsp Mint, chopped
• 1 tsp Thai Fish sauce
• 1 tbsp Groundnut oil

Method:

• Heat the oil in a wok or a deep frying pan and fry the chicken for 5-7 minutes until golden.
• Add the mushrooms and fish sauce and cook for another 5 minutes.
• Add the coconut milk and simmer for 7 minutes before adding the mint and the lime juice.
• Add chopped onions and mix before serving.
• Serve with wild rice.
