Cupcakes with Vanilla and Chocolate Chips

Ingredients:

• 450 g self-rising Flour
• 50 g Butter
• 60 g Caster Sugar
• 80 g Dark Chocolate with hazelenuts and raisins, chopped
• A handful of Raisins
• 2 Eggs, lightly beaten
• 300 ml Milk
• 1 tsp Baking powder
• 1 tsp Vanilla extract

Method:

• Preheat the oven to 200 C/ Gas mark 6.
• In a large bowl, mix the flour with baking powder, then add the softened butter and mix well.
• Add the sugar, chocolate bits and raisins to the flour and mix well.
• In a separate bowl, mix the eggs with milk and vanilla and add to the dry flour mixture.
• Spoon the mixture into cupcake liners and sprinkle with some sugar.
• bake in the oven for about 20 minutes until golden and leave to cool for 5 minutes before serving.
