Simple Soup with Carrots, Celery, Mushrooms and Mint
Ingredients:
- 2 large Carrots, cubed
- 1 large Onion, finely chopped
- 3 cloves garlic, finely chopped
- 2 Celery stalks, finely chopped
- 200 g Mushrooms, chopped
- 50 g instant dry Noodles
- 750 ml Vegetable/ Chicken Stock
- 1 tbsp Lemon juice
- 1 tbsp chopped dry Mint
- 1/4 tsp Turmeric
- 2 tbsp Olive Oil
- Salt and Pepper
Method:
- Heat the oil in a sauce pan, then add onion, garlic, celery and carrots. Add turmeric and mint to the vegetables, mix well and cook over high heat for 5 minutes.
- Add the mushrooms to the pan and mix well, then add the stock, season and cook covered over low heat for 35-40 minutes.
- Add the noodles and lemon juice to the pan, mix well and cook covered for another 5 minutes.
- Serve hot.
