Grilled Salmon with Peas and Lettuce
Ingredients:
- 4 Salmon steaks, boneless
- 250 g Pancetta, cubed
- 2 Gem lettuce, finely shredded
- 220 g frozen Peas
- 200 ml vegetable Stock
- 2 tbsp double Cream
- 3 tbsp fresh Parsley, chopped
- 1/2 Lemon juice
- 60 g Butter, melted
- Salt and Pepper
Method:
- Brush the salmon with some of the butter and season with salt and pepper. Cook the salmon under a preheated grill for 4 minutes on each side, then remove and keep warm.
- Meanwhile, Cook the pancetta in a pan for 3-4 minutes , then add the lettuce, mix well and cook for another 3 minutes.
- Add the stock , bring to boil and simmer for 3-4 minutes.
- Add the peas, parsley and cream and bring to boil while stirring frequently.
- Add the remaining butter and lemon juice before removing from heat.
- Pour the sauce over grilled salmons before serving.
