Spaghetti with Prawns in a Creamy Tomato Sauce
Ingredients:
- 400 g Spaghetti
- 500 g Prawns
- 400 g can chopped Tomatoes
- 2 cloves Garlic, finely chopped
- 100 ml Brandy
- 2 tbsp fresh Parsley, chopped
- 2 tbsp double Cream
- 3 tbsp Olive Oil
- Salt and Pepper
Method:
- Cook the spaghetti in a pan of boiled water for 5 minutes or until cooked. Drain and set aside.
- Meanwhile, heat the oil in a saucepan and cook the prawns for 3 minutes over medium heat, then remove from the pan and set aside.
- Cook the garlic in the same pan for 2 minutes, then add chopped tomatoes and brandy and mix well. Cook for another 10 minutes over medium heat.
- Add the chopped parsley and cream to the tomato mixture, then return the prawns and season with salt and pepper before mixing well.
- Serve the prawn mixture over spaghetti.
