Simple Moist Apple Cake

• 150 g plain Flour
• 150 g caster Sugar
• 150 g Butter
• 3 Apples
• 2 Eggs
• 4 tbsp Breadcrumbs
• 1/4 tsp Cinnamon
• 1/4 tsp Nutmeg
• 1 tsp Baking Powder
• 1/2 Lemon, juice only

Method:

• Preheat the oven to 180 C/ Gas mark 4.
• Beat the sugar and butter in a food mixer until fluffy.
• Pour the lemon juice in a bowl then peel and cut apples into chunks and remove the cords and put them in the lemon juice.
• Add cinnamon and nutmeg to the apples in lemon juice and mix well.
• Beat the eggs with a fork and add gently to the butter and sugar mixture.
• Add the flour and baking powder to the cake mixture and fold gently.
• Line a 24 cm cake tin with a piece of baking parchment and pour the mixture into the tin.
• Arrange the apples on top of the mixture and sprinkle with a little sugar and breadcrumbs.
• Bake the cake for 1 hour until the top is slightly golden and serve warm with vanilla ice cream.
