Pancakes with Ricotta and Egg
Ingredients:
- 50 g plain Flour
- 250 g Ricotta Cheese
- 4 tbsp caster Sugar
- 3 Eggs, whites and yolks separated
- 25 g Butter, melted
Method:
- In a large bowl mix the cheese with egg yolks and sugar.
- Whisk the egg white until stiff and fold gently into the ricotta mixture.
- Heat the butter slightly in a non-stick pan and place 3 spoonful of mixture in the pan. Cook for 2-3 minutes on each side until lightly golden.
- Sprinkle with sugar and serve with honey or jam.
