Simple Fritters with Sweet corn, Peas and Flour
Ingredients:
- 1 small can of Sweet corns (160 g), drained
- 50 g frozen/ fresh Peas
- 150 g self-rising Flour
- 3 large Eggs, white and yolk separated
- 25 g Milk
- 3 tbsp Olive Oil
- Salt and Pepper
Method:
- In a large bowl, mix the flour with corn, peas, yolks and milk, mix well and season with salt and pepper.
- Whisk egg whites until fluffy and fold into the corn mixture.
- Heat the oil in a frying pan and place individual fritters using a spoon. Fry for 4-5 minutes on each side over high heat. Remove the fritters when lightly golden.
- Serve with a green salad.
