Easy Version of the Classic Chilli Con Corn
Ingredients:
- 250 g minced Beef
- 1 large Onion (200 g), finely chopped
- 2 cloves Garlic, finely chopped
- 1 Red Pepper, deseeded and finely chopped
- 1 can Kidney Beans (130 g)
- 3 tbsp Tomato paste
- 100 ml Beef stock/ boiling water
- 1 tsp Chilli powder
- 3 tbsp Olive Oil
- 400 g Tortilla chips
- Salt
Method:
- Heat the oil in a large saucepan and cook the beef over medium heat for 10 minutes until brown. Stir frequently.
- Add onions, red pepper and garlic to the beef, mix well and cook for another 5 minutes.
- Drain the kidney beans and add to the beef mixture with the tomato paste and chilli powder and mix well.
- Add the stock or boiling water to the pan, cover and cook over medium heat for a further 15 minutes. Stir the mixture occasionally.
- Serve the chilli with tortilla chips and sour cream.
