Herb crusted Roast Beef
Ingredients:
- 1.5 kg Beef fillet, trimmed
- 4 cloves Garlic, finely chopped
- A bunch of Thyme, trimmed
- A handful of fresh Parsley, finely chopped
- A handful of fresh Oregano, finely chopped
- A handful of fresh Mint, finely chopped
- 80 ml Balsamic Vinegar
- 120 ml Olive Oil
- Salt and Pepper
Method:
- Mix vinegar, olive oil, garlic and thyme in a bowl and season with salt and pepper.
- Marinade the beef with the vinegar mixture overnight or for at least 2 hours, turning occasionally.
- Preheat the oven to 240 C/ Gas mark 9.
- Place the beef on a lightly oiled oven tray and roast for 15 minutes on each side or 10-12 minutes for medium. Remove from the oven and leave for 15 minutes.
- Scatter chopped parsley, oregano and mint over a large piece of cling film and roll the beef in the herbs until it is completely coated.
- Wrap the beef in the cling film and leave in the fridge for 2 hours.
- Remove from the cling film, slice thickly and serve with roast potatoes.
