Pie with Beef and Cheese Mash
Ingredients:
- 500 g minced Beef
- 1 Onion, finely chopped
- 1 Carrot, finely chopped
- 400 g can chopped Tomatoes
- 1 tbsp tomato Ketchup
- 1 tbsp Worcestershire sauce
- 1 tbsp Thyme leaves, chopped
- 25 g butter
- Black Pepper
Mash
- 1 kg Potatoes, peeled and cut into small chunks
- 25 g Butter
- 50 g Cheddar, grated
- Salt and Pepper
Method:
- Preheat the oven to 200 C/ Gas mark 6.
- To make the pie, melt the butter in a frying pan and fry onion and carrot for 10 minutes over medium heat, the remove from the pan and set aside.
- Add the beef to the frying pan and cook for 10 minutes over high heat until browned.
- Add cooked onion and carrot to the beef and mix well.
- Add Worcestershire sauce, ketchup, tomatoes and thyme to the beef, stir and simmer for 20 minutes until reduced. Season with salt and pepper.
- Meanwhile, to make the mash, cook the potatoes in salted water for 20 minutes. Drain the potatoes, season and mash with butter and half the cheese.
- Place the beef mixture into a shallow oven proof dish and top with mash. Sprinkle with the remaining cheese and cook in the oven for 30 minutes.
- Serve with steamed vegetables.
