Mushrooms Cooked in Creamy Cheese Sauce

Ingredients:

• 250 g Mushrooms, sliced
• 1 onion, chopped
• 2 clove Garlic, finely chopped
• 50 g Cheddar, grated
• 250 g Milk
• 25 g plain Flour
• 4 slices of Toast
• 1 tbsp single Cream
• 60 g Butter
• Salt and Pepper

Method:

• Preheat the oven to 190 C/ Gas mark 5.
• Heat 30 g of butter in a frying pan and fry mushrooms, onion and garlic for 5-6 minutes until soft.
• Meanwhile, heat rest of the butter in a saucepan, then stir in flour and cook for 3 minutes before adding the milk and stirring continuously.
• Once the sauce has thickened, add half the cheese and the cream into the sauce and season with salt and pepper.
• Add the mushroom mixture into the sauce and mix well.
• Spoon some of the mushroom and sauce mixture over each piece of toast and sprinkle with the remaining cheddar.
• Bake the toasts in the oven for 5 minutes before serving.
