Roasted Vegetables with Red Onions, Butternut Squash and Fetta
Ingredients:
- 1 medium Butternut Squash, seedless and cut into 8 wedges lengthways
- 2 red Onions, quartered
- 4 small Beetroots, cooked and quartered
- 4 cloves Garlic
- 150 g Feta, crumbled
- 400 g can Chickpeas
- 1 tsp Sumac (optional)
- 2 tbsp Olive Oil
Method:
- Preheat the oven to 200 C/ Gas mark 6.
- Cook the squash in the oven for 25 minutes, then add onions and garlic cloves to the tray and cook for another 10 minutes.
- Add the beetroot to the vegetable tray and cook for another 5 minutes.
- Remove the vegetable tray from the oven, then mix the vegetables with chickpeas and feta on a salad platter.
- Sprinkle vegetables with sumac and drizzle with olive oil before serving.
