Marinated Pork with Cumin, Coriander and Garlic
Ingredients:
- 400 g Pork, cut into strips
- 6 spring Onions, chopped
- 1 small Lettuce, shredded
- 1 medium Cucumber, cut into strips
- 3 Tomatoes, sliced
- 1 tbsp Olive Oil
- 4 Pittas, warmed
Marinade
- 2 tbsp Cumin powder
- 1 tbsp Paprika
- 1 tbsp ground Coriander
- 1/2 Lemon, zest and juice
- 1 clove Garlic, finely chopped
- Salt
Method:
- To make the marinade, mix all the ingredients in a large bowl. Add the pork strips to the marinade, mix well and chill for about half an hour.
- heat the oil in a frying pan and fry the pork with spring onions for 12 minutes until pork is thoroughly cooked.
- Divide the pork and onion mixture between four pittas, and then add shredded lettuce, tomatoes and cucumbers to pitta pockets before serving.
