Healthy Salad with Lentils, Cucumber and Carrot
Ingredients:
- 400 g can Lentils, drained and rinsed
- 2 medium Carrots, cut into small cubed
- 2 Spring Onions, chopped
- 1/2 Cucumber, cut into small cubes
- 50 g Feta, grated
- 1 tbsp Lemon juice
- 1 tbsp extra virgin Olive Oil
- Salt and Pepper
Method:
- Mix all the ingredients in a bowl and serve as a starter or brunch.
