Grilled Fish with Lemon grass, Chilli and Coriander
Ingredients:
- 4 fresh rainbow Trout, gutted
- 1 tsp grated Ginger
- 2 cloves Garlic, finely grated
- 2 stalks of Lemon grass, finely chopped
- 1 red Chilli, deseeded and roughly chopped
- 2 tbsp Thai fish sauce
- 1 tbsp Soy sauce
- 3 tbsp caster Sugar
- 50 g Butter, melted
- a handful of fresh Coriander
Method:
- Blend all the ingredients apart from fish and butter in a food processor or blender for 30 seconds or until a smooth paste is formed.
- Fill the cavities in each fish with the paste and barbecue them over hot grill for 5-6 minutes on each side.
- Drizzle with melted butter and sprinkle with chopped parsley before serving.
