Side dish with mixed Peppers and Capers
Ingredients:
- 2 red Onions, thickly sliced
- 1 red Pepper, cut into strips
- 1 yellow Pepper, cut into strips
- 1 Green Pepper, cut into strips
- 2 tbsp Capers
- 1 tbsp Oregano
- 1 tbsp Thyme
- 1/2 tsp Chilli powder
- 3 tbsp red wine Vinegar
- 2 tbsp Olive oil
- Salt and Pepper
Method:
- Heat the oil in a heavy based saucepan and saute onion for about 5 minutes over medium heat.
- Add the peppers to the onion, season with salt and chilli and cook covered on low heat for about 30 minutes, stirring occasionally.
- Add the vinegar, thyme and oregano to the pan, stir and cook uncovered for about 3 minutes over medium heat.
- Serve with steak, roast chicken or as part of a green salad.
