Classic Chicken salad with Bacon and Parmesan
Ingredients:
- 2 Chicken breasts, cooked and sliced
- 3 baby cos Letuces
- 100 g cooked Bacon, chopped
- 2 slices of White Bread
- 1/2 tbsp Olive Oil
- 1 tsp Parmesan shaving
Dressing:
- 1 Egg, Yolk only
- 3 Anchovy fillets
- 2 tbsp Lemon juice
- 1 clove Garlic, finely chopped
- 1/2 tsp Dijon Mustard
- 2 tbsp extra virgin Olive Oil
- Salt and Pepper
Method:
- Cut the bread into cubes and fry in 2 tbsp of olive oil for 3-4 minutes or until golden. Drain the bread on a kitchen towel to remove the excess oil.
- To make the dressing, mix all the ingredients in a blender until a sauce is formed.
- Place letuce leaves with bread, cooked chicken and bacon pieces on a serving plate and drizzle with the dressing.
- sprinkle the salad with parmesan before serving.
