Lamb marinated in Yogurt and Spices
Ingredients:
- 500 g Lamb, cubed
- 200 g Greek Yogurt
- 1 large Onion, thinly sliced
- 400 g chopped Tomatoes
- 3 cloves Garlic, finely chopped
- 600 ml beef/ vegetable Stock
- 1 tsp Turmeric
- 1/2 tsp Paprika
- 2 tsp Cumin
- 1/2 tsp Chilli flakes ( Optional)
- 1 tbsp Lemon juice
- 1 tbsp Olive oil
- 1/4 tsp Salt
Method:
- Pour the yogurt in a large mixing bowl and add garlic and all the spices to the yogurt and mix well. Then add the lamb cubes, stir well, cover and chill for at least 2 hours.
- Heat the oil in a heavy based saucepan and fry onions for 4-5 minutes or until golden, then add tghe chopped tomatoes and cook for another 5 minutes over medium heat before adding the stock.
- Add the lamb and all the marinade to the pan and mix well with the tomato sauce. Bring to boil, then simmer for about 1 hour or until the lamb is tender and sauce has thickened.
- Serve hot with Naan bread or saffron rice.
