Chicken cooked with Beans, Peas, mushrooms and Saffron
Ingredients:
- 4 Chicken legs
- 4 Chicken breasts, skin-less
- 2 medium Potatoes, thickly sliced
- 200 g frozen green Peas
- 200 g green Beans, trimmed
- 100 g Mushrooms, quartered
- 1 tsp Turmeric
- 1/4 tsp Saffron, dissolved in 4 tbsp of hot water
- 3 tbsp Olive oil
- Salt and Pepper
Method:
- Preheat the oven to 180 C/ Gas mark 4.
- Cover the surface of a large baking tray with foil and coat lightly with oil.
- Season the chicken pieces with salt, pepper and turmeric and place in the tray.
- Put the potato slices, beans, peas and mushrooms in layers on top of the chicken. Season with salt and pepper and drizzle with saffron and the remaining olive oil.
- Cook in the oven for about 2 hours until chicken is cooked and vegetables are soft.
