Frittata with fresh Parsley, Eggs and Spring Onions
Ingredients:
- 80-100 g fresh flat leaf Parsley, roughly chopped
- 5 spring Onions, finely chopped
- 1 small Potato, finely grated
- 5 Eggs, beaten
- 3 tbsp Olive oil
- 1 tsp Turmeric
- Salt and Pepper
Method:
- Mix the chopped parsley with spring onions in a large bowl. Then add the eggs and mix well.
- Add the turmeric, salt and peppers to the mixture and stir well.
- Heat the oil in a large frying pan and add the mixture to the pan. Cook uncovered over medium heat for 20 minutes, then turn the frittata and cook for another 20 minutes.
- Serve warm with green salad.
