Omelette with Bacon, Feta and fresh Broad beans
Ingredients:
- 300 g Broad beans, podded and skinned
- 100 g streaky Bacon, diced
- 80 g Feta, grated
- 6 eggs, beaten
- 1 tbsp Olive oil
- 20 g Butter, unsalted
- Salt and Pepper
Method:
- Brown the bacon in a heavy based frying pan without any oil for 3-4 minutes or until cooked, then remove and wipe the pan clean.
- Meanwhile add about 50 g of the cheese to the beaten eggs and season with salt and pepper.
- Heat the oil and butter in the pan, add the bacon and beans to the pan and fry for 3-4 minutes, stirring frequently.
- pour the egg mixture over the beans and bacon, mix well and cook over low heat for 10 minutes.
- Sprinkle rest of the cheese on top of the omelette and put the pan underneath hot grill for 3-4 minutes or until eggs are set.
- Serve with summer salad.
