Mediterranean style Salad with summer veg and Garlic and Vinegar dressing
Ingredients:
- 100 g Broad beans, podded
- 100 g fresh Asparagus, cut into 4 cm pieces
- 1 ripe Avocado, cut into chunks
- 2 spring Onions, chopped
- 50 g green Olives, pitted
- 2 tbsp fresh Mint, chopped
Garlic dressing:
- 2 tbsp extra virgin Olive oil
- 2 cloves Garlic, finely chopped
- 3 tbsp red wine Vinegar
- Salt and Pepper
Method:
- Cook the asparagus in boiling water for 3 minutes, then drain and rinse under cold water for couple of seconds.
- Put avocado chunks with olives, beans, asparagus and onions in a serving plate.
- To make the dressing, mix all the dressing ingredients in a bowl and drizzle over the vegetable plate.
- Serve with warm crusty bread.
