Marinated Chicken Salad with fresh Spinach and Black Olives
Ingredients:
- 4 Chicken breasts
- 1 tsp Basil
- 1 tbsp plain Flour
- 2 tbsp Olive oil
- 1 clove Garlic, finely chopped
- 2 Eggs, boiled and sliced
- 1 Red Onion, sliced
- 50 g Black Olives, pitted
- 100 g Spinach, roughly chopped
- 3 tbsp Parsley, roughly chopped
- 2 large Tomatoes, thinly sliced
- 1 tsp Balsamic Vinegar
- 1 tsp extra virgin Olive oil
- Salt and Pepper
Method:
- Coat the chicken breasts with basil, garlic and flour, then season before cooking them for 8-10 minutes on each side in olive oil.
- Mix spinach, parsley, sliced eggs, tomatoes, olives and onions in a salad bowl.
- Cut cooked chicken into thick strips and lay on top of the salad mixture.
- Drizzle the salad with balsamic vinegar and extra virgin olive oil before serving.
