Fresh Spinach cooked with Onions, Garlic and Eggs
Ingredients:
- 1 kg fresh Spinach
- 2 large Onions, thickly sliced
- 1 clove Garlic, finely chopped
- 3 Eggs, beaten
- 1 tbsp Olive/ Vegetable oil
- Salt and Pepper
Method:
- Chop the spinach leaves roughly and cook in a lightly salted water for 5 minutes. Drain well.
- Heat the oil in a frying pan and saute onions and garlic for 3-4 minutes until slightly soft and golden.
- Add the spinach to onions, season and cook for 4-5 minutes, stirring frequently.
- Pour the beaten eggs over the spinach mixture, cover the pan and cook over medium heat for 4 minutes or until the eggs are set.
- Serve with fresh crusty bread and Greek yogurt on the side.
