Grilled Mussels with Garlic, Parsley and Butter
Ingredients:
- 1 kg Mussels in shells, rinsed under cold running water and drained
- 70 g Breadcrumbs
- 5 cloves Garlic, finely grated
- A handful of fresh Parsley, finely chopped
- 50 g Butter, softened
- 1 Lemon, juice and zest
Method:
- Preheat the oven to 180 C/ Gas mark 5.
- Cook the mussels in a pan covered with 50 ml water for 3 minutes or until mussels are open, then drain and discard those which are still close.
- Mix the butter with garlic and parsley and spread into each mussel.
- Mix the breadcrumbs with lemon zest and lemon juice and spread on top of buttered mussels.
- Grill for 4 minutes.
- Serve as a starter or a light main meal.
