Scallops with Mediterranean Tomato Sauce
Ingredients:
- 12 large Scallops
- 1 tbsp Olive oil
Sauce
- 400 g Tomatoes, peeled and roughly chopped
- 80 ml Olive oil
- 2 cloves Garlic, finely chopped
- 2 tbsp Red wine Vinegar
- 1 tbsp fresh Basil, chopped
- 1 tbsp Parsley, chopped
- 1 tbsp fresh Coriander, chopped
- Salt and Pepper
Method:
- To make the tomato sauce, saute garlic with olive oil for 2 minutes, then add tomatoes, fresh herbs and vinegar.
- Mix the tomato mixture and season with salt and pepper and cook for 3 minutes, stirring frequently. Remove the pan from the heat and set aside.
- To make the scallops, drizzle them with olive oil and cook in a hot pan for 1 minute on each side.
- Serve the scallops on top of tomato sauce.
