Summer Salad with Beans, Mushrooms and Cherry Tomatoes
Ingredients:
- 150 g Mushrooms, sliced
- 100 g Cherry Tomatoes, halved
- 200 g Green Beans, trimmed
- A handful of fresh Rocket leaves, roughly chopped
- 50 g Feta Cheese, crumbled
- 1 tbsp extra virgin Olive oil
- 2 tbsp Lemon juice
- Salt and Pepper
Method:
- Cook the beans in salty water for 5 minutes until tender, then drain.
- Mix the beans with mushrooms, tomatoes and rocket leave and season. Top the salad with cheese and drizzle with olive oil and lemon juice.
