Green Peas cooked with fresh Mint, Feta and Lemon
Ingredients:
- 300 g Green Peas
- 3 spring Onions, chopped
- 3 tbsp Olive oil
- 1 lemon, juice and zest
- 100 g Feta Cheese, crumbled
- A handful of Mint leaves, roughly chopped
Method:
- Cooked the peas in a pan of boiling water for 3 minutes, then drain and tip into a large bowl.
- Add the feta, mint, olive oil and spring onions and lemon juice and zest to the peas and mix well.
- Serve as a side dish with Battered fish or steak.
