Rice cooked with Spices and Almonds
Ingredients:
- 400 g Basmati Rice/ White Rice
- 1 litre vegetable Stock
- 1 Onion, finely chopped
- 2 cloves Garlic, finely chopped
- 1 tsp Turmeric
- 1/4 tsp Saffron threads
- 1/2 tsp ground Cumin
- 1 tbsp of Almond flakes
- 2 tbsp Olive oil
- 2 Green Chillies, deseeded and thinly sliced
- Salt and Pepper
Method:
- Rinse the rice under cold running water for 2 minutes and drain.
- Add the rice to the stock in a large saucepan and bring to boil, then simmer for 10 minutes or until rice is tender, then drain and leave aside.
- In a Wok or a large frying pan, heat the olive oil and saute onion and garlic for 4-5 minutes, then add the rice, cumin, turmeric, chilli, saffron and salt and pepper and mix well.
- Fry the rice on medium heat for 5 minutes stirring frequently. Stir in the almonds at the end.
- Serve hot with barbecue fish, kebabs or curry.
