Summer Vegetables with Fetta and Pesto
Ingredients:
- 1 Red Pepper, cut into chunks
- 1 Green Pepper, cut into chunks
- 4 Spring Onions, chopped
- 1 Large Onion, thickly sliced
- 1 large Courgette, sliced
- 500 g Mushrooms, sliced
- 5 tbsp Red Pesto
- 75 g Fetta Cheese, crumbled
- Salt and Pepper
Method:
- Mix all the vegetables in a large bowl and season with salt and pepper.
- Put the vegetables on a sheet of foil, top with red pesto and cover with another sheet of foil.
- Barbecue the foiled vegetables for 30 minutes and serve topped with fetta cheese.
