King Prawns with stir-fry Vegetables and Pineapple slices
Ingredients:
- 360 g cooked King Prawns
- 1/4 ripe Pineapple, peeled and thinly sliced
- A handful of fresh Coriander, roughly chopped
- A handful of fresh Mint, roughly chopped
- 300 g mixed Green leaves/ Chinese stir-fry Vegetable
- 2 Limes, juice only
- 3 tbsp Soy sauce
- 1 tsp Fish sauce
- 1 tsp Brown sugar
Method:
- In a large bowl, mix vegetables, prawns and pineapple together.
- In a seperate bowl, mix soy, fish sauce, sugar and lime juice and make dressing.
- Serve the vegetables and prawns with dressing drizzled on top.
