Spicy Pork chops with Honey, Lime and Pineapples
Ingredients:
Pork chops
- 4 Pork chops
- 3 cloves Garlic, crushed
- 3 tbsp Orange juice
- 1 tsp Cumin
- 1 tsp Oregano
- 1/2 tsp Coriander
- 1/2 tsp Black Pepper
- 1/4 tsp Cinnamon
- 2 tbsp Wine Vinegar
- 2 tbsp Honey
- 1/4 tsp Salt
Pineapple Salsa
- 200 g Pineapple, finely diced
- 3 Spring Onions, finely chopped
- 2 tbsp Lime juice
- 1/4 tsp Chilli powder
- 50 ml Vinegar
- 2 tbsp Caster Sugar
- 1/2 tsp Cumin
- 2 tbsp fresh basil, chopped
- Salt and Pepper
Method:
- To make pork chops: Mix honey, garlic, vinegar, orange juice, oil, black pepper with herbs in a bowl.
- Pour the mixture over the chops, cover and marinate in the fridge for 3 hours.
- Grill in a hot ridged pan for 5 minutes on each side.
- To make the salsa: In a large pan, mix the pineapple, sugar, vinegar, chilli, lime juice and cumin. season and bring to boil.
- Cook over medium heat for 10 minutes until sauce has thickened.
- Add onions and basil to the salsa and mix well.
- Serve the pork chops with Salsa on the side.
