Marinated Pork chops with Red Pepper and Apricot sauce
Ingredients:
Pork chops
- 6 pork loin chps, cut 1/2 cm thick
- 50 ml Soy sauce
- 3 tablespoons Sesame oil
- 3 cloves Garlic, crushed
- Ground Pepper
Sauce
- 2 Red peppers, roasted and quartered
- 200 g Apricots, halved and stoned/ dried apricots
- 3 cloves Garlic, crushed
- 225 ml Chicken/ vegetable stock
- 1 Lemon, zest
- 2 tsp Soy sauce
Ingredients:
- To make the pork chops: Mix sesame oil, garlic and soy sauce together ina small bowl.
- Put the chops in a large resealable bag, pour over the oil mixture and marinate in the fridge for 3 hours.
- To make the sauce: Mix the stock with roasted peppers, apricots, garlic and lemon zest in a pan, simmer over low heat for 30 minutes while stirring occasionally.
- Blend the sauce in a blender or food processor, add the soy sauce and blend until an smooth sauce is formed.
- Remove the pork chops from the bag, grill in the oven at 190 C/ Gas mark 5 for 10 minutes on each side.
- Serve the chops with mash potatoe and sauce on top.
