Roast fillet of Lamb with herbs and Wine Vinegar
Ingredients:
- 300g Lamb fillet
- 1 small bunch of Coriander
- 1 small bunche of Mint
- 1 small bunch of Thyme
- 2 cloves Garlic, crushed
- 4 tsp Olive oil
- 150ml Wine Vinegar
- 2 tbsp Prune chutney
- Salt and Pepper
Method:
- Marinade the lamb with herbs, garlic, oil and vinegar for 1 hour.
- Pre heat the oven to 200 C/ Gas mark 6.
- Brown the lamb in 1 tbsp of oil for 4 minutes and set aside.
- Place the lamb in a roasting dish, cover with chutny and roast for 10 minutes, then remove and stand for 5 minutes.
- Serve slices of lamb with vegetables.
