Rump steak with Mustard and Cream sauce
Ingredients:
- Rump Steak, cut into ten 3cm cubes
- 2 tbsp Olive oil
- 1 Garlic bulb, roasted
- 1 tbsp grain Mustard
- 142ml double Cream
- 10g Butter
- 50g French string Beans, trimmed
- 1 Red Pepper, cut into strips
- 1 Yellow Pepper, cut into strips
- 2 tbsp Lemon juice
- Salt and Pepper
Method:
- Heat a griddle or large, heavy-based frying pan over a high heat.
- Thread 5 cubes of beef each onto a skewer. Brush the beef with a little olive oil and season with pepper only.
- Squeeze the roasted garlic into a food processor with the grain mustard and the cream, blend for 15 seconds and reserve.
- Cook the beef skewers on the preheated griddle. Cook for 2 minutes on each side for medium.
- Meanwhile fry the green beans and pepper strips in a hot wok with oil and butter for 2 minutes, then add the lemon juice and season.
- Rest the beef for 5 minutes.
- Serve the beef with bean mixture and the mustard sauce on top.
