Mixed vegetables in a spicy Coconut sauce
Ingredients:
- 5 plum Tomatoes, peeled and cut into chunks
- 1 Onion, sliced
- 2 Garlic cloves, crushed
- 125 g frozen Peas
- 5 baby Carrots, quartered
- 225 g chinese Cabbage, sliced
- 2 tbsp Olive oil
- 1 tsp Turmeric
- 1 tsp Chilli powder
- 1/4 tsp ground Cumin
- 400 ml unsweetened Coconut milk
- A handful of fresh coriander leaves, chopped
- Salt and Pepper
Method:
- Satue Onion and garlic in oil for 5 minutes until softened.
- Add carrot, peas, coconut milk, turmeric and chilli powder to onions and simmer for 3 minutes, stirring constantly.
- Add sliced cabbage and tomatoes and simmer for another 3 minutes while stirring. Season with salt and pepper
- Serve with chopped coriander scattered on top.
