Rice mixed with Vegetables, Ham and Prawns
Ingredients:
- 225 g Rice
- 1 Onion, finely chopped
- 4 Celery, chopped
- 1 Green Pepper, seeded and diced
- 2 Aubergines, diced
- 2 tsp Worcestershire sauce
- 1 tsp Soy sauce
- 600 ml Chicken stock
- 100 g cooked Ham, diced
- 225 g Prawns
- 3 tbsp Parsley, chopped
- 1 clove Garlic, crushed
- 25 g Butter
- 30 ml Olive oil
- Salt and Pepper
Method:
- Cook the onion in a large casserole dish with butter and olive oil. Cook until onions are soft.
- Add celery, aubergine, garlic and green peppers to the onion mixture and cook for another 5 minutes.
- Wash the rice under cold running water and drain. Add the rice to the pan and mix well. Add the stock, soy and Worcestershire sauce to the rice mixture, season and stir well.
- When the liquid start to boil, cover the casserole dish and bake in the oven at 180 C/ Gas mark 4 for 20 minutes.
- Remove from the oven, stir in ham and prawns and cook covered for another 5 minutes or until the rice is cooked.
- Mix in the parsley just before serving.
