A classic Beef dish with Mushrooms and Cream

• 650g fillet Steak, trimmed and cut into strips
• 1 tsp Worcestershire sauce
• 5 tbsp Olive oil
• 50g Butter
• 2 Onions, sliced
• 350g Chestnut Mushrooms, finely sliced
• 3 tbsp Cognac
• 300 ml soured Cream 
• 1/2 Lemon, juice 
• A pinch of Paprika
• Salt and Pepper 

• Season the meat with salt, pepper and Worcestershire sauce.
• Fry the beef in the oil in a saucepan until meet is browned.
• Remove the beef from the pan, reduce the heat, add butter and fry onions until soft.
• Add the mushrooms to the onions and fry for 2-3 minutes.
• Add the meat with any juices to the mushrooms and pour over the Cognac. Immediately set alight and shake the pan until the alcohol has burnt itself out.
• Stir in the soured cream. As soon as it is hot, mix in the lemon juice, season and sprinkle with a little paprika.
• Serve with boiled rice.
